Irish soda bread

Soak 2 cups flakes for a few hours or overnight in 2 cups of sour milk.  I use oat or soy milk with the juice of a lemon stirred into it. 
Stir into the moist mixture 2 ½ cups of flour and 1 tsp. bicarbonate of soda. Knead lightly.
Form into two equal sized balls and flatten out on a floured surface to form rounds of about 2 inches thick.  Score deeply into 6 or 8 pieces  
Grease and flour a baking (cookie) sheet
Bake at 375 degrees for 20 - 25 minutes or till cooked through

Soda Bread

1½ cups           all purpose flour
1½ cups           whole wheat flour
or 3 cups other flour blend
1 tbsp               sugar
1 ½ tsp             baking powder
2 tsp                 baking soda
½ tsp                salt
1 ½                  buttermilk or yoghurt & water blend
Mix all dry ingredients.
Pour in buttermilk.
Mix quickly and pour onto sprinkled flour on counter     .
Mix to form dough then a ball.
Place in a well oiled pie plate or sheet pan.
Bake @ 375 F for 45 minutes.

Ginger orange scones

3 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp ground ginger
1/2 cup chopped crystallized ginger
2 tsp grated orange peel
3/4 cup butter
1 1/4 cup buttermilk (or yogurt and soy milk)
Combine dry ingredients with cubed cold butter.
Add buttermilk and stir to form dough.
Knead lightly to form two balls.  Flatten to 1 inch thick on ungreased cookie sheet andscore into 6 wedges.  Brush top with milk.   
Bake @ 400 F 20 min.

Berry cornbread

Blend together    
2/3 cup silken tofu
1 1/2 cup soymilk
1 cup apple juice

3 1/2 cups cornmeal
1 cup flour - can be spelt, oat, kamut, barley
1/2 cup cornstarch
4 tsp baking powder
2 tsp soda bicarbonate
1/2 cup sesame seeds
3 cups dried or frozen berries - cranberries work best
1 cup chopped walnuts
Fold dry ingredients in the soymilk mixture.
Pour into buttered pan or bread mold
Bake at 350 F45 min or longer until the top is darker brown

                                        Millet stuffing

I use this stuffing for salmon but it would probably work with other fish or poultry.
2 cups millet
1 cup chopped mint
1 cup chopped parsley
Cook millet till al dente, let cool.  Mix with chopped parsley and mint.  

Zucchini basil muffins

Preheat oven to 400 F.  Combine 2 large eggs, 3/4 cup whole milk, and 2/3 cup oil.  Combine separately 2 1/2 cups flour, 1 Tbsp sugar, 2 tsp salt, and 1 Tbsp baking powder.  Grate 2 cups of zucchini and mince 1/4 cup basil leaves.  Combine dry and wet ingredients.  Fill muffin cups and add a tbsp of grated cheese on top.  Bake 30 to 40 min until golden.  This recipe makes 12 large muffins.   I use a good olive oil, spelt instead of wheat, any tender summer squash will do, and any fragrant herb can be used instead of basil.


A very corny bread

10 to 15 big servings

3 C cornmeal
2 1/4 C flour
2 Tbsp baking powder - non GMO corn
2 tsp baking soda
1 tsp salt
1/2 tsp of nutmeg or any spice you may fancy, or none
3 C corn grain
1 C red and geen pepper chopped finely
Mix all these dry ingredients in a large bowl.  

In a blender, at low speed, mix
3 C milk or soymilk
5 large eggs
1 C olive oil.
Pour into the bowl and mix well.  Pour into a well oiled large lasagna pan, to a thickness of 1 inch or so.  In the oven at 425 F for an hour or so.
